Friday's Muffin Day
Friday's not exactly my favorite day of the week, if I were picking favorites I'd probably choose Wednesday. But today isn't Wednesday, today is Friday and Friday is muffin day. I like Friday's because I get to make muffins, whatever kind I feel like and we have the ingredients.
Today's muffins were Orange Poppy Seed Muffins. I found the recipe in a family cookbook that my Grandma's family compiled. The recipe is as follows:
1/2 c. butter
1 c. sugar
1 1/2 c. flour
1/2 tsp. salt
1/2 tsp. baking soda
1 Tbsp. poppy seeds
1 egg
1/2 c. sour cream
2 Tbsp. grated orange peel
2 Tbsp. orange juice
Preheat oven to 400 F and grease 12 medium size muffin cups. Cream the butter and sugar, add the egg, sour cream, orange peel, and orange juice, mix well. Add the flour, salt, baking soda, and poppy seeds and mix until moistened. Spoon batter into the greased muffin cups and bake for 17-20 minutes. Serve warm with orange-cream cheese butter.
Orange-Cream Cheese Butter
1/2 c. butter
1/4 c. powdered sugar
1 Tbsp. grated orange peel
3 oz. cream cheese
Cream the above ingredients until smooth.
These are lovely morning muffins, the butter is definitely a butter and not a frosting which is nice. Usually we make lemon poppy seed muffins and the orange was a nice twist. The muffins are quick and simple to make and they taste lovely to boot. The butter isn't essential to the niceness of the muffin but it is definitely a tasty addition if you have the ingredients on hand and would be lovely to set out on a tea table or for a brunch.
