Chocolate and Muffin

Two of my favorite food items are chocolates of all natures and muffins. What could be better then than a chocolate muffin? Here's the one that I found to make this morning, compliments of Baking.

Chocolate Pecan Muffins
11 Tbl. butter
1 c. unsweetened cocoa powder
7 Tbl. sugar (1 Tbl. less than a cup)
1/4 c. hard backed and rounded dark brown sugar
4 eggs
vanilla
1/2 tsp. almond extract
1/4 c. + 3Tbl. flour
1/2c. pecans, chopped

Melt the butter and cocoa powder together. Add the sugars and beat well. Beat in the eggs and flavors, use as much vanilla as you like somewhere in the neighborhood of 1 tsp. Sift the flour over the mixture and mix in the add the nuts. Spoon into muffin cups and bake for about 15 minutes in a 350 degree F oven. Let sit a moment before serving.

These are fantastic, they are much like a dark chocolate candy bar in muffin form and are a great Friday morning breakfast with a piece of fruit.
